Mexican Chicken
Ingredients needed
3-4 boneless skinless chicken breasts
tortilla chips
Spices to season - ground pepper, adobe or all spice
1-2 eggs
1/4 cup milk
Grab a handful of tortilla chips and put them in a ziplock bag. Crush the chips into crumbs. My kids like to put the bag on the floor and jump up and down on it.
When you have them all crushed, pour the contents onto a flat plate or shallow bowl.
Whip up the egg with the milk - For a low fat version, use the white only of 2 eggs and pitch the yokes. Coat both sides of the Chicken breast in the egg then dredge in the tortilla crumbs.
Place on a greased cookie sheet and pour a little melted butter over the top of each one to help the crust brown up.
Cook at 400 degrees for about 45 minutes or until crispy golden brown. Serve with a side of mashed potatoes and/or your favorite vegetable. Tastes great dipped in a little salsa.
